Channa Dal (Curried Chickpeas) (India)

2-3 Tablespoons vegetable oil
1 Tablespoon garam masala
1 small onion diced & browned
1 teaspoon garlic paste
1 teaspoon ginger paste
1 teaspoon ground turmeric
1/4 teaspoon ground cumin
1/2 teaspoon ground coriander
Then Add
2 14 ounce cans diced tomatoes
2 cans chickpeas or garbanzo beans (1 with liquid, one without liquid)

Cook rice
Chop some fresh cilantro for the top as a garnish (optional)

In a large pot heat the vegetable oil, add the garam masala and mix in. Add the diced onions, cook until lightly browned. Add the garlic and ginger pastes as it browns. Then add the next three spices. Add the two cans of tomatoes. Last you add the two cans of chickpeas or garbanzo beans; one with the juice and one with the juice drained. Bring to a slight boil and let simmer for about 5- 10 minutes. Serve over rice. Put a pinch of chopped fresh cilantro on top (optional).
