Kenya Crunchy Bananas

2 bananas
1 Tablespoon butter
1 Tablespoon brown sugar
1/4 teaspoon cinnamon
Chopped unsalted peanuts

Cut bananas in half lengthwise. Place in greased 9 X 9 baking pan. Melt butter and add brown sugar and cinnamon. Brush or spoon mixture over bananas, sprinkle on the chopped peanuts. Bake at 375 degrees for 20 minutes or until golden brown.

We changed our recipe up just a bit… We decided the put more of the brown sugar and butter mixture on our bananas. So we made more than one recipe for the sauce. We usually have several who do as well as don’t want nuts, so we made some of each. I think I would like salted peanuts better, but I like a little salt with my sweet… I think it would be worth a try to experiment with that option…

Just a note: our next two weeks recipes will be repeats of some of our earlier ones. We have a special surprise for the end of first semester program… Hope the parents and families like it…

    We’re in Ethiopia right now and that’s what they served with pancakes at breakfast yesterday!

    Thanks for the nice recipe. We tried it but used pecans instead of peanuts and served it with vanilla ice cream for dessert – very good!
