Basic Crepe Batter

It has been a really busy year for cooking class this year… As you know we are making hot lunch once a month so that has kept me kind of busy… I will be posting several of the recipes that we have made so far… Below you will find the crepe recipe

Basic Crepe Batter

Serves: 24

1 1/2 cups flour
1/8 teaspoon salt
3 eggs
1 1/2 cups milk
2 tablespoons melted butter cooled

Sift flour and salt into bowl. Break eggs into another bowl ; mix until yolks and whites are well blended. Pour into reservoir in middle of dry ingredients. Stir flour mixture into eggs little by little. It may be necessary to add a little milk to incorporate all flour; mix liquid in thoroughly, small amounts at a time before adding more. When mixture becomes easy to work (when about half the liquid has been used) remainder can be added in 2 portions. Add melted butter and mix.
