Pumpkin Bars

Serves: 24

1 cup vegetable oil
4 eggs
2 cups sugar
1small can pumpkin
Add
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 cup chopped nuts
Frosting
3 ounces cream cheese
3/4 stick butter
2 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon milk
Cream well and frost cake

Heat oven to 350° Grease 15 x 10 inch baking pan. In a large bowl blend all bar ingredients except for nuts and raisins. Blend for 2 minutes; stir in raisins and nuts. Spread evenly in prepared pan. Bake at 350 ° for 25 to 30 minutes or until toothpick inserted into center comes out clean. Cool. In a small bowl, beat cream cheese, margarine, and orange juice. Gradually beat in powdered sugar until smooth. spread over cooled bars. Sprinkle with additional nuts, if desired. Makes 48 bars.
