Homemade Noodles

Homemade Noodles

2 cups flour
1 – 2 teaspoons salt
2 Cups semolina
2 tablespoons olive oil
6 eggs
Put flour, semolina, and salt into a mixing bowl. Make a well and add 6 eggs and 2 tablespoons of oil. Using a bread hook mix all ingredients until a Softball is formed. Turn Out onto a floured Surface, let rest for a few minutes, and roll dough out with a rolling pin until desired thickness. Cut with pizza cutter or knife to noodle width. We used a pasta machine to do the finished rolling… to #4 and then cut with the linguini Cutter… Drop noodles into pan of boiling water and cook 4-6 minutes… I cooked the shorter time because was putting the noodles into soup and cooking longer…

We also have a recipe without semolina… This one is really simple

For every 1/2 cup of flour; 1 egg
Mix in a bowl by hand until all flour is incorporated with the egg…You may have to add flour as needed if the dough is too sticky.
