I don’t usually use a recipe for this soup… so today when we made the soup together… I actually wrote down the ingredients and the amounts that we used to make a pot of soup that makes 15 cups… (two ladles full) that would probably feed 12-15 people if you are doing about 1 cup servings…

2 Large sweet onions (sliced thin)
6 Tablespoons of olive oil

4 envelopes of Lipton Onion Soup Mix… (2 boxes)
12 cups water
2 heaping Tablespoons of beef broth base (we used Orrington Farms)
1 teaspoon salt

1. Saute the onions in the olive oil until translucent and soft…
2. Add Lipton Onion Soup Mix Stir and let the onions get coated…
3. Add water
4. Add beef broth base… (Here you may want to taste your soup to see what the flavor is like) The students tested the soup and thought that it needed more flavor so we added the beef base and 1 tsp salt… it is all your individual preference…
Continue to simmer.

We will be topping our soup with a toasted (in Oven) bread round with cheese on top usually calls for shredded Monterrey Jack… At home I put soup in bowl, add toasted bread, cover with cheese and broil…
